Sumac is used extensively in Middle Eastern cuisine, but in recent years it has made its way into our Quebec cuisine. Although staghorn sumac grows abundantly in Quebec, it is not part of our culinary tradition. The followers of locavorism have propelled it to the rank of a spice darling since it replaces lemon in many recipes.
