Imagine the patience and skillful hands required to harvest ox-eye daisy buds! Before the flower blooms, while the bud is still tightly closed and the petals are unrevealed, we roam the fields to perform this precious harvest.
The buds are then blanched and hand-packed in a light brine of sea salt and apple cider vinegar. The result is an exceptional artisanal product that we proudly created by chance one June evening nearly 20 years ago, during a dinner with friends!
