Balsam fir tips
Fir tips are harvested early in the spring and then dried and powdered. They have a fruity aroma reminiscent of pineapple and cherry candy. Add to your deserts, sprinkle on fish or incorporate in your tartar.
Green alder buds
Green alder has a strong floral and musky aroma. It is ideal for flavouring desserts, stews and chutneys.
Sweet clover flowers
Sweet clover is the vanilla of the North! Its rich fragrance reveals notes of vanilla, fresh hay and almonds. Use in the same recipes and proportions as vanilla.
Sweetgale
Sweetgale has a fresh, resinous scent reminiscent of bay and sage. It is used to flavor desserts and grilled meats without prolonging the cooking time because its taste is powerful.
