Lobster mushrooms, with their large size and bright orange colour are easy to identify and visible from a long way off. It can be very abundant, especially along sandy forest roads. Its firm and generous meat has a clear smell and taste of seafood.
The lobster mushroom is in fact two mushrooms. When the edible but humdrum short-stalked russula is attacked by another mushroom, the Hypomyces lactifluorum the result is this wonderful mushroom.
Lobster mushrooms are handpicked in northern forests and carefully dried. They can then be used in a variety of dishes throughout the year.
