A Mushroom Like a Treasure!

Few people can boast of having foraged fire morels. The harvest is dictated by forest fires, which often occur in remote areas without motorized access or services, attracting foragers from around the world.

It’s truly a race against time to collect as many specimens as possible during the short season. The morels are sun-dried in the forest to achieve a superior quality product.

Cooking Morels

Many enthusiasts believe that morels develop a richer taste after drying. Stuffed with potatoes and Gruyère, cooked with cream rabbit, or served in sauce with pasta or risotto, morels always win unanimous praise from guests.

Rehydrate the mushrooms in a liquid (water, broth, milk, wine, etc.) until they are saturated (time varies depending on whether the liquid is hot or cold), then incorporate them into your recipe. Remember to reserve the rehydration liquid by carefully straining it; it’s full of the rich taste of mushrooms! If your recipe already contains liquid, there’s no need to pre-soak the mushrooms.
