Sweet gale

Sweet gale is an exquisitely fresh spice with slightly peppery and evergreen notes, reminiscent of nutmeg. It goes well with both sweet and savory dishes but should not be simmered for too long as it develops a slight bitterness.

Use sweet gale to marinate poultry and pork or to flavor desserts made with apples, pears and chocolate. Sweet gale is tasty in a spice blend with green alder and balsam fir tips, especially for flavoring hot chocolate!
