Reinvented Capers!
These wild “capers” are made from elderberries picked while they are green and hard, before reaching full maturity. They are then salted, pickled, and left to macerate for several weeks to reach their full flavor potential. The result is a singular, refined, and decidedly different condiment.
The Noma restaurant, which pioneered Nordic cuisine, popularized this method of preparing berries. We are offering it here made in our own way after many kitchen trials.
