A Season in the Forest: a rich and comprehensive 6-month training on wild harvesting!
From May to October 2025, immerse yourself in the heart of the forest and rediscover your territory differently!
Wild harvesting is a lifestyle, a world where your baskets are filled with tasty plants and mushrooms, where your free time is spent on long walks in search of precious patches, and where even the smallest outing in nature (and even in the city!) becomes an exciting adventure.
What’s around the bend in the trail?
What plants grow among the tall grasses in this wasteland? What wild flavors will be on my plate tonight?
Learn to identify and harvest dozens of wild plants that surround you
Transform your harvests to enjoy them year-round
For us, harvesting is a family affair! It’s what connects us, fuels our discussions, and brings joy to our table.
Since we published FORÊT and Cueillir la forêt—books on harvesting and cooking wild plants, now best-sellers in Canada—we have interacted with thousands of nature lovers who share our attachment to the territory.
We have realized how many of you have a thirst for these forgotten know-hows, and how important it is more than ever to share the knowledge that allows us to establish a deeper connection with our environment.
This precious action of handpicking to bring healthy, fresh, local foods to your mouth is part of our DNA. We believe everyone should be able to experience a closer intimacy with the wild world.
We want to take you to the forest with us by offering you a complete training entirely online, and accessible for life, which will allow you to venture into harvesting with confidence!
Harvesting is so much more than a basket filled with plants and wild mushrooms; it’s a way to connect with your environment.
We offer you a 6-month online training featuring webinars, Q&A sessions, guest speakers, and a community to interact with. It is a comprehensive and in-depth training program where we share what we have learned most precious to allow you to plunge into the heart of the forest.
“The training was beyond our expectations, we would recommend it without hesitation to anyone wishing to change how they view the forest…. It’s so rewarding to recognize what surrounds us and learn to use it. Every outing will become an enriching experience.”

In honor of Gerald (1950-2024), his love of the forest and the impact he had on many lives’ trajectories, Gourmet Sauvage makes his teachings available. The webinars with Gerald and Ariane are pre-recorded and the Q&A sessions with Ariane are live.
Ariane worked for over 10 years as a host, columnist, and researcher specializing in the environment on television and radio. In 2015, she left Montreal to take over Gourmet Sauvage, the company founded by her father, where she was immersed her whole life.
She is the co-author of the books “Forêt identifier, cueillir, cuisiner” and “Cueillir la forêt” published by Éditions Cardinal and dedicates much of her time to creating content to share her father’s legacy.
Teacher, economic development agent, commercial fisherman, lecturer, and co-host with his daughter Ariane of the show “Coureur des bois” broadcast on Télé-Québec, Gérald Le Gal has pursued many careers in Canada and abroad.
In 1994, he founded Gourmet Sauvage, a pioneering company in the wild plant harvesting and forest education sector. In recent years, Gérald has devoted as much time as possible to his true passion: teaching (and fishing)!
Gérald left us in January 2024, leaving behind a rich legacy of knowledge he generously shared throughout his life.
“We take you with us into the forest, guess what adventures await you around the bend”
