King boletes are large mushrooms with a tawny or reddish-brown cap, commonly found near spruce trees, first appearing in early summer and then again in autumn. They are among the best-selling mushrooms worldwide, second only to chanterelles, possibly due to their nutty flavor and firm, pleasant texture that make them irresistible!

This is one of the finest mushrooms, and finding it is always a joy, whether alone or in groups. Near the entrance of Gourmet Sauvage stands a grand spruce that blesses us every year with several king boletes discovered at dawn. These woodland treasures are always welcomed with delight!

The king boletes we offer you are handpicked in the forest and meticulously dried. This results in flavorful dried mushrooms of high quality.

Cooking King Boletes

The woodland flavor of king boletes, reminiscent of nuts, makes them a mushroom of choice for preparing risotto or accompanying meats and dishes with a strong flavor.

Rehydrate the mushrooms in a liquid (water, broth, milk, wine, etc.) until they are soaked (the time varies depending on whether the liquid is hot or cold), then incorporate them into your recipe. Remember to save the rehydration liquid by carefully filtering it; it’s full of the rich taste of mushrooms! If your recipe already includes liquid, there is no need to pre-rehydrate the mushrooms.

King boletes can be used whole, cut into pieces, or ground into powder using a food processor.
