Description

Black morels are the black gold of our northern forests. Along with truffles, they are among the most expensive mushrooms. They are often very plentiful during the spring following a forest fire. The harvest is short-lived and the dust and ash from the fire make this harvest a difficult one. Morels are mythical and an aura of scarcity clings to them. Combined with their incomparable taste, they are a choice mushroom to serve to your guests.

Morels, a real treasure

Few people have harvested morels. Forest fires often occur in distant forests that are difficult to access. Still, big fires attract pickers from many countries who converge on the harvest and live in precarious conditions in the burnt-out forest.

The short harvest is a race against the clock. The hollow mushrooms are dried in the sun or in makeshift dryers in the forest where they are harvested.

Using morels

Many morel fans will tell you that morels taste better dried than fresh. Stuffed with mashed potatoes and gruyere cheese, cooked with rabbit à la crème or in a white sauce on pasta, morels are always a hit with guests.

Rehydrate your mushrooms in the liquid of your choice (water, wine, stock, milk) until they are swollen and pliable (about 10 minutes) and use them in your favorite recipe. Keep any excess liquid for other recipes. If your recipe already has liquid, toss the mushrooms in as they are; they will rehydrate during the cooking. Use them as is, chopped in chunks or ground into a powder in your blender.
