You may be surprised to learn that two types of wild plum grow in Quebec. They love soils with clay and lots of sunlight and the magnificent blossoms are a sight for sore eyes along old rail lines and country roads.
About the size of a large olive and bright red with yellowish hues, wild plum compare very well with cultivated varieties. The pulp is plentiful and sweet and the delicious jam is great at breakfast or with salted dishes.
Wild plum is a delicious fruit whose harvest is somewhat problematic. Harvests are uneven and like many small trees in this family, plum trees are regularly attacked by fungi and other diseases. We take advantage of the good years to stock up on the fruit.
Our jam is handmade and totally artisanal. We cook small quantities at a time and add a bit of organic sugar. The result is a unique product with a smooth and rich texture as well as a buttery and slightly acidic taste.
