An abundant and little known mushroom

The lobster mushroom is in fact two mushrooms. When the edible but humdrum short-stalked russula is attacked by another mushroom, the Hypomyces lactifluorum the result is this wonderful mushroom.

Lobster mushrooms are handpicked in northern forests and carefully dried. They can then be used in a variety of dishes throughout the year.

Using lobster mushrooms

Simmered in a white sauce, lobster mushrooms are superb on pasta, in vol-au-vent and they naturally accompany fish and seafood dishes.

Rehydrate your mushrooms in the liquid of your choice (water, wine, stock, milk) until they are swollen and pliable (10 to 15 minutes) and use them in your favorite recipe. Keep any excess liquid for other recipes. If your recipe already has liquid, toss the mushrooms in as they are; they will rehydrate during the cooking. Use them as is, chopped in chunks or ground into a powder in your blender.
